Method

  1. 1Preheat oven to 180°C / 160°C fan
  2. 2Mash 3 ripe bananas and mix with 80g melted butter, 150g sugar, 1 egg, and 1 tsp vanilla
  3. 3Fold in 200g plain flour, 1 tsp baking soda, and a pinch of salt
  4. 4Fold in 60g Orisirisi Sweetened Coconut Flakes
  5. 5Pour into a lined loaf tin
  6. 6Scatter extra coconut flakes on top
  7. 7Bake for 45-50 minutes until golden and a skewer comes out clean
  8. 8Cool for 10 minutes before slicing
